I'm curious why the word won't is not, instead, the word willn't.

"Won't" is a contraction of "woll not," woll coming from the Latin volo, velle (to wish), though there are Teutonic roots for the verb as well. I'd assume, however, that the Teutonic roots may have even had their origin in Latin.
